Source and Processing
Navitas Naturals cacao beans are hand selected for quality, partially fermented to alleviate bitterness, and processed at low temperatures for maximum nutrient retention. Once extracted from the pod-like fruit, purified water is then used to cleanse the beans where they are peeled and partially ground to form small pieces or "nibs." Navitas Naturals Cacao Nibs contain 100% pure cacao that is certified organic, kosher, vegan, and raw.
General Uses:
A favorite product line among gourmet food artists, Navitas Naturals Cacao comes in a variety of forms for you to experiment with.
- Raw chocolate is unsweetened; mix with your sweetener of choice and experiment with it in place of chocolate anywhere recipes call for cacao or chocolate powder.
- Nibs do not melt when heated, so use them in places you'd enjoy a crunchy texture.
- To make homemade chocolate, melt the Navitas Naturals Cacao butter and mix together with Navitas Naturals Cacao powder and a sweetener, such as agave, honey or Navitas Naturals Yacon syrup.
Recipe:
Chocolate Cherry Truffles
Ingredients
1/2c.Navitas Naturals Cacao Nibsground into a powder (more for a richer flavor)
1/2c. Pitted, packed dates
1 tsp. Cheery extract (Frontier herbs makes a nice one)
2 tsp. Eden cherry concentrate
1/4c. Dried cherried, coarsely chopped
Directions
Grind the cacao nibs in a coffee grinder until powdered. Puree all the ingredients in a food processor until the batter becomes emulsified. Then, refrigerate the batter until chilled.
Form the batter into round balls or desired shapes (you can use candy molds with a variety of shapes or shape into a block and make thin slices). These are best refrigerated and will last for up to 6 months.
For a more milk chocolaty flavor, puree in:
1c. Soaked and dehydrated walnuts or 1/2c. Almond Butter
Variations:
*Add 2 tsp. fresh ginger and replace cherries with dates.
*Mix in a few Navitas Naturals Cacao nibs (not ground) for texture.
