What is Matcha?

Matcha means ‘Rubbed or Ground Tea’ and is the Japanese term for the precious powdered green tea, traditionally reserved for the Japanese Tea Ceremony (Sadō).

The process of manufacturing premium Matcha begins with choosing the right place for the cultivation of the tea plants (Camellia sinensis). The soil and climatic conditions play a key role in the final flavor and nutritional value of the tea. The very best Matcha is said to be that from the Uji region of Kyoto. The mountainous region provides the perfect high altitude climate and the morning mists of the 2 rivers of the region add just the right amount of moisture needed for the cultivation of tea. Kyoto is a city with a rich history and culture. It is the place where ‘The Way of Tea’ (Sadō) was formed and refined and where it is still, to this day, an integral part of the culture.

The Matcha tea plants are shaded from direct sunlight for about 8 weeks before harvest. The results are higher chlorophyll and L-Theanine contents and a richer, greener color. L-Theanine is an amino acid specific to green tea that provides unique health benefits and sweetness in flavor. It is the main reason why high quality green teas taste less astringent and bitter and are more pleasant to the pallet. It also helps to reduce stress and induce a state of calm, relaxed alertness.

The different types of Japanese tea are commonly graded depending on the quality and the parts of the plant used. High quality Matcha is always hand-picked to assure that only the unopened tea bud and the accompanying finest, top two leaves are chosen. The tea-leaves selected to become Matcha are called Tencha. The leaves are then carefully steamed to prevent the nutrients from oxidation and keep the tea fresh and green. After that, all the rough fiber, such as stems and veins, are removed to assure the fine powdery consistency and the sweet flavor typical for a great Matcha. The Tencha leaves are then slowly ground up in traditional granite stone-grinders to a very fine, talc-like powder – Matcha!

Since Matcha is extremely prone to loosing nutrients, color and freshness by being exposed to light or air, proper storage and packaging is crucial to assure highest quality.

How many cups of regular green tea are comparable to 1 tsp (one serving) of DōMatcha™?

How can I determine Matcha quality?

You can tell the quality and freshness of Matcha by the color, the flavor and by how well it mixes.

How do I prepare Matcha?

Preparing a cup of delicious DōMatcha™ is quick and easy – and fun!

To enjoy a traditional style Matcha, make it your own little ceremony, by using a traditional hand-made bamboo whisk and a beautifully decorated hand-crafted ceremonial drinking bowl. And remember – every cup is special!

Using a traditional bamboo whisk:

Put ½-1 teaspoon of DōMatcha™ in a large cup or a drinking bowl and add a small amount of hot water. Whisk in a quick, light zig-zag motion until a layer of green froth appears on the surface. Add more water if desired. DōMatcha™ can be used for ‘thin’ or ‘thick’ Matcha.

The ideal water temperature for DōMatcha™ is between 65 and 85 degrees Celsius.

How does the caffeine in Matcha affect my body?

All teas that are derived from the tea plant (camellia sinensis) contain Caffeine, sometimes referred to as Theine. Since Matcha consists of the entire tea-leaves in a powdered form, it is relatively high in Caffeine. With one teaspoon of Matcha (3 gram) you consume about 70 mg of caffeine, which is a similar to the amount in a cup of coffee.

Due to its unique combination of phyto-nutrients, the caffeine in Matcha is assimilated in a very different and much healthier way. The caffeine in Matcha binds to the larger catechin molecules, that also act as powerful antioxidants, and is released into the bloodstream slowly over time, as the catechins are broken down and assimilated. The results are ‘time-released’ smaller dosages of caffeine that provide sustained energy for up to 6 to 8 hours. This mechanism also prevents the insulin and adrenalin spikes typical for coffee intake, so you never have to experience the ‘after-low’ that follows when the blood sugar drops.
Potential negative effects are also balanced by the calming influence of the amino acid L-Theanine. The relaxing effects of L-Theanine act antagonistically against the stimulatory effects of caffeine on the nervous system thus smoothing the body’s reaction and leading to an experience of dynamic bliss. is harvested in late August. The leaves have been exposed to sun longer creating a higher amount of catechins and a more astringent flavor. It is lower grade of Matcha and thus a much lower price. But higher catechins!


Hi there. I am a huge DoMatcha fan and wanted to share something with you guys. We live in Bastrop Texas and had to evacuate our home Sunday due to a devastating wildfire that swept through our neighborhood. We had about 15 minutes to get out while hearing the sound of our neighbors propane tanks exploding. We gathered all of our pets first - quite a few as we have a farm. After loading the animals and releasing the birds from my aviary, I had a moment to throw a few things in a laundry basket. I want you to know that my DoMatcha made the list! It's a bit strange, but you never know what you'll do or take in that situation. The tea would be so easy to replace yet still, I grabbed it. I didn't take any clothes or "valuables". Sometimes I think that the small things can be the most precious, and I look forward to "tea time" so much every day. Anyway, as silly as it sounds to grab a tin of tea while running from a fire, I just wanted you to know.

Master Handa's Juicy Matcha Recipe

Is it tea or juice? Either way, everyone agrees that Master Handa's juicy matcha recipe is delicious! Now we want to share it with everyone else:
1/2 to 1 teaspoon of DōMatcha
6 ounces of water
6 ounces of juice, preferably a thick all-fruit drink such as Odwalla fruit smoothies

Mix the matcha and water together thoroughly. Pour juice in a separate glass, and add add matcha mix on top to form a lovely two-layered effect. You can also mix the matcha directly into the juice for a refreshing drink any time of day!

Matcha Green Tea Latte Recipe

For one 12oz to 16oz serving: Blend 1-2 teaspoons of DōMatcha™ and a small amount of liquid with a spoon to make a smooth paste. You can use hot or cold milk as well as vanilla soy, rice or almond milk. Add more liquid and sweeten as desired. Try adding chai spices, vanilla or white chocolate syrups for delicious variations!

Matcha Green Tea Frappe Recipe

For one 12oz to 16oz serving: Mix 1-2 teaspoons of DōMatcha™ with cold milk or vanilla soy/rice/almond milk and some ice cubes in a blender. Add sweetener, fruit or a sprinkle of cinnamon as desired. So easy and so good!

"Jade Lemonade" Matcha Recipe

A new twist on a summer favorite: lemonade with a touch of matcha! Tangy lemonade goes perfectly with the sweet, mellow flavors of matcha green tea.
Simply add 1/2 teaspoon of matcha to 8 ounces of lemonade, and mix. This jade green refresher is perfect for those hot summer afternoons. Just sip, and relax!

Tea & Spice Matcha Chai Recipe

Add some spice to your routine with this terrific chai recipe, made with vanilla almond milk and DōMatcha™ green tea (serves two):
16 ounces vanilla almond milk
1-2 cardamom pods
1/8 teaspoon peppercorns
1/4 cinnamon stick
3 whole cloves
1/8 inch slice of fresh ginger
1/4 teaspoon dried fennel seeds
1 bay leaf (optional)
1 teaspoon DōMatcha™
Bring almond milk and spices to a boil. Boil for 5 minutes, then simmer for 10 minutes. Strain into a blender. Let the mixture cool down for a few minutes, then add 1 teaspoon of DōMatcha™ and blend. You can also make a DōMatcha™ Chai Frappe by blending with ice. Mmm-matcha!

Best price I found on the net! Ive put some in my protein shake rather than drink it as a tea. Not crazy about the taste as a tea, but in a protein shake its masked and I still get to ingest it!

This is one of the best Matcha green tea powders I have tasted. Its so green and so smooth not like other sea weed tasting ones I have had in the past. You can tell its definitely from the first harvest of the tea leaves. My one complaint is the packaging, it comes in a silver foil pouch and by the time you dump it out you have wasted quite a bit of the product. Other than that its great!
