      <description><![CDATA[Talk about rich! I like the idea of using something like egg in order to amp up the richness factor of the toast while at the same time adding to satiety with the protein-this is very clever as just making the toast high in fat can fail to satisfy (as I have experienced with french toast in the past: yes, I used a vegan flax egg but I think that from thinking about this recipe and how the ingredients work together, the best thing will be to use lite coconut milk and tofu or vegan egg like JUST...thank you for giving me an idea of how I can improve upon my failed vegan french toast; I think I will be trying to make it again...wish me luck! &lt;3)]]></description>

      <description><![CDATA[I love this recipe, made with gluten-free bread (could also be made with regular bread, depending on your preference). The use of coconut milk makes it nut-free, which is necessary in our house, and the shredded coconut gives it a great taste without it being too sweet (I used unsweetened shredded coconut). Quick to make, even on busy mornings, but also easy to make ahead and reheat one minute in the pan. Really a nice discovery, I really recommend it.]]></description>

I love this recipe for coconut french toast, it is so simple but delicious and the fats in the coconut really help keep you full! I love how this recipe also has fourteen grams of protein in it!
