THere is tons of fennel that always ends up in the compost at the Farmer's market I go to weekly. I dip not know that the bulbs could be prepared that way!!! It sounds great except for one thing: how does it taste? It would be great of you could have provided some insight there, for anyone who does not have background with cooking up fennel or fennel bulbs specifically. Anyway, I can imagine this being a great variation on the bell pepper or carrot hummus dipping and I will have to try it out myself (thank you for the idea!)

I am the type of person who loves dips, sauce, etc and will usually just grab something like a cracker or something with a neutral taste to enjoy the sauce with - if I am being mindful I will opt for carrots or celery but sometimes it can get boring. I love fennel and never thought to use crispy fennel wedges as a type of cracker, if you will, so this is such a wonderful and innovative idea! Thank you so much for sharing, I can't wait to try this next time I have some fennel!
