This recipe really nails the comfort factor. It feels so very perfect for the fall! I am not even a fan of apple but I still think that this recipe sounds great. I think that the "blossomy" gentle sweet "almond" flavor pairs very nicely with coconut and apple, so I like that you include almond flour here as well as almond milk. And, it is hard to go wrong with maply syrup, especially in a comforting recipe like this one. Finally, it is awesome that this recipe is gluten free too. I have no clue how you come up with so many great ideas!!!

I never knew that crock pots could be used for so many different things! I love how this chia seed pudding contains apples as well it is a delicious way to start your breakfast and get enough fiber in the moring too to keep you full. I am wondering if you can make this apple chia pudding on the stove top instead if you do not have a crock pot? I imagine it would be possible just the cooking time would be different!
