      <description><![CDATA[A good caprese is delightful. This recipe gets the basics of the tomatoes and aromatics...though there certainly is something missing for me. I know that it makes the recipe less healthful for sure but I want to pair it with some good ciabatta or flatbread and some fresh slices of artisan vegan cheese. It's simply, sinfully flavorful, with the rich taste of the Mediterranean. Thank you for the idea...and for rekindling some good food memories for me with this particular recipe too!]]></description>

      <description><![CDATA[A nice Caprese salad is my favorite salad! I love the freshness and sweetness of it, and I love vinegar so adding balsamic vinegar to is phenomenal. I sometimes have a hard time with dairy so having a dairy-free option is so nice, I also think vegan cheese could add a nice flavour as well. Sea salt is a great addition to this salad too. I love having this salad for a snack as well as an addition to meals!]]></description>
