      <description><![CDATA[I love lentils. And lentil curry! I make lentil curry or lentil curry pasta just about every week because it is an awesome and simple staple rich in both plant-based protein and flavor. It's also fiberful! Thank you for giving me another idea of spices and flavors that I might want to add to my lentil curry. I definitely am going to skip out on the tomato (which has never been my thing) but yellow onion, thyme, and anise are all spices that I can see myself adding and enjoying :D]]></description>

We're happy you're excited to try our Easy Curried Lentil Soup. Spoiler alert, it's delicious! 

We think substituting the tomato for sweet potato would also taste great, it wouldn't sacrifice the flavour profile, just would taste slightly less acidic, which if you find you're missing that palate, you can always add a slight dash of apple cider vinegar.

      <description><![CDATA[I love lentils so much! They make such a great and filling meal and they are also loaded with delicious flavors and are filled with nutrients and are so good for you! I love lentil soup and this recipe looks amazing, I usually just throw whatever vegetables I have in a pot and cook it with tomatoes and vegetable stock but I really want to try this recipe! It is loaded with such delicious ingredients and is filled with so many vitamins and health benefits that not only is it delicious you also feel great eating it!
