Like sweet potato toasts! Or, rather mini-toasts! I love how cute and flavorful these seem. I could imagine them being perfect appetizers for a party: the sweet potato certainly lends a nice color too and I can envision many possible riffs and variations of this recipe. I personally would skip the pine nuts as not only is my boss allergic ( ;) ) but I do not find this to be a healthy nut, although I do have to admit that it is flavorful and from reading your recipes, I think that you have a knack for good flavor pairings :).
Hello,

Thank you for sharing your love of sweet potatoes! Indeed, they do make baking, that much more delicious. They can be used in many baking recipes and are probably better known in brownie recipes, but these bites are also a yummy one.

Enjoy!

I love sweet potatoes and will usually gravitate towards any recipes that have them in them (little public service announcement for you but sweet potatoes are delicious in desserts as well! They make your baking very soft!) I love this recipe for the sweet potato bites and it would make such a great and filling snack or appetizer! Also dipping it in plain greek yogurt is delicious and such a healthy way to incorporate a protein rich dip into your meals.
