Hemp Protein Lemon Poppy Seed Cake

Are you on a detoxification program or on a sugar-free, Candida diet? Or do you simply eat cake so much that you are just looking for a healthier version to replace the old one? If you said yes (because who doesn't love cake!) then this is the recipe you've been looking for! This sugar-free, grain-free lemon poppy seed cake is made with a full serving of hemp protein and it's perfect as a dessert, snack or breakfast. One serving has an impressive 21 grams of protein and 8.5 grams of fiber.

Serves 1

Ingredients:

1/4 cup egg whites2 teaspoon xylitol1/4 teaspoon natural gluten-free lemon extract
3 tablespoon non-flavored hemp protein powder1 teaspoon poppy seeds
1 tablespoon coconut oil, melted1 teaspoon lemon zest

Directions

Set your oven to 375F

  1. In a medium bowl, combine all of your ingredients together and stir until fully incorporated.
  2. Place the mixture into a slightly greased ramekin (use some extra coconut oil if you have it!). Place in the oven and bake for 25 minutes.
  3. Serve warm!

Make It This Way

You can make this recipe egg-free and vegan by substituting the egg whites with a flax seed egg.

Flax seed egg substitute:

The measurement below replaces one egg

1 tbsp finely ground flax seed

3 tbsp warm water

Combine both ingredients into a glass and allow it to sit for five minutes. Add to recipe as you would normally.

    I love hemp seeds and find that they make any baked good so soft and moist! This is a great recipe for that because it incorporates hemp protein. I also love lemon I find it so refreshing and tasty in baked goods and such a summery and happy addition to any dessert! I also love how many of these recipes include flax seed eggs and give alternates to ingredients! This recipe for hemp protein lemon poppy seed cake looks so delicious, thank you for sharing it!
