Hello Rachel,
Indeed, you can enjoy a nice maple medley with roasted carrots and sweet potatoes as well. We hope you like this recipe when you make it and enjoy a little taste of Canada.

Acccording to a Harvard study on over 20,000 health professionals, potatoes are the food whose consumption is, of all vegetables, associated with the most weight gain over time. I am not saying potatoes are necessarily unhealthy but among fruits and vegetables, there certainly are better options out there.
This recipe for non-potato maple mash is a great idea to have an alternative to mashed potatoes if you do not have any potatoes on hand or if you want to eat something with the same texture as mashed potatoes but not actually having potatoes. This is such a great and healthy recipe that also sneaks in more vegetables and a different variety of vegetables that you can include with no one realizing. Great recipe.
