I am not the biggest fan of brussel sprouts...but even I must admit that good quality brusselsprouts (such as those which I can get from the local Farmer's market) or when prepared well, they are delicious. I am personally a big fan of coconut oil because unlike other oils given its high saturated fat content as opposed to mono or polyunsaturated fats, considering heat exposure, it still will be low in advanced glycation end products, which are cooking byproducts that can drive aging and metabolic issues. And, I bet that the coconut oil lends a most delightful flavor (I have never heard of brussel sprouts being cooked with coconut oil before!)

Hello,
Brussel Sprouts are a great vegetable, but definitely not everyone's favourite vegetable. Seasoning them well helps to cut the bitter taste they can sometimes have. Thank you for sharing your favourite way to enjoy this vegetable too, the maple syrup sounds delicious!

Stay well!

I love brussel sprouts and could never understand the bad reputation that they got! I love baking mine and adding a bit of maply syrup to them as a glaze which I think might work very nicely with this recipe too but this recipe also looks delicious without it! The garlic is such a great addition too. Yum! I find these are a very great and versatile vegetable to cook with so I love seeing new ideas for how to make them! Thanks for sharing :)

As a kid, I never liked brussels sprouts. I love them now and serve them often to my family. The only way I cooked them prior to finding this recipe was steaming. However, since finding this recipe this has become our favourite. I prefer to slice the brussels sprouts in half lengthwise first. This recipe is very delicious. These herbs give the dish more flavour. If there are leftovers, which is very rare, we have them for lunch.
