Sweet potatos commonly are find themselves into my weekly meal prep because in terms of nutrition (vitamins/minerals and antioxidants) per dollar as well as cost per calorie fruit or vegetable, sweet potatos are true superstars. I have actually never had sweet potato in a smoothie before and now that this recipe has made me think about it, I have actually never tried sweet potato in ice cream before either. I now have two new ideas for sweet potato; thank you NN Team! :)

The idea of putting a sweet potato into my morning smoothie just sounds so, so, so well - wrong! I was shocked when I came across this recipe as I was looking for new breakfast ideas but I would be lying if I didn't say it intrigued me and finally after reading the introduction, it got me very curious about trying it! I can imagine that the sweet potato fills you up, not to mention adding much more nutrients to your smoothie! I am usually hungry shortly after my smoothies so this would be an interesting way to see if it would be my new solution! Cool recipe! Thank you for sharing! :)
