Indeed, it's important to know an oils smoke temperature in order to use it properly and not destroy its nutrient profile. Avocado and coconut oils have a high smoke point, making them great to cook with, while others make better dressings.       <description><![CDATA[I earned a Bachelors in biology at MIT and am currently earning my PhD in the UCSF Biomedical Sciences Program. I am so, so glad that you have a whole section of lipid oxidation and smoke point because my research &amp; what I have learned in my coursework has taught me to think very properly about how fats are treated (specifically heat exposure) because this can have HUGE effects on how a fat influences health (eg too much heat can convert heart healthy omega 3s to not-so-healthy oxidation proucts!]]></description>
