      <description><![CDATA[I highly value efficiancy and for example use nutrient content per dollar to determine the vegtables that I purchase regularly (sweet potato is a big winner here). Speaking of efficiency, I have to start eating more sprouts as I didn't know that, in fact, sprouts offer the highest amount and quality of vitamins, minerals, proteins, fibre AND enzymes per unit of calorie, potentially even being the most nutritious food a person can eat. 

I learned quite a few things about sprouting from this article-for example, I did not know that sprouting increased protein content at the expense of carbohydrate but it makes sense that the seedling would consume accessible carbohydrate in order to synthesize new proteins for its own growth. And, it is great to know that while sprouting works best in indirect sun and, in fact, is not dependent on weather or time of year: I'll have to try it myself some time!]]></description>
