      <description><![CDATA[European eggplant is delicious when prepared right, in my opinion-but it certainly takes work: to release compoundsd that contribute to bitterness, I cut the eggplant into many pieces and lay them out, then salt them, forcing the eggplant to "sweat" over the hour. Japanese eggplant has far less of these bitter compounds so such a procedure is unecessary. Also, given it is thinner it is not only easier to cut but also more readily ammenable to applications such as stir fry (eg to skillet cooking). So, for eggplant lovers who don't love all the work or want a different/more versatile vegetable, I would recommend japanese eggplant!]]></description>
