5-Minute Vanilla Bean Cake

Yes, we know it’s hard to believe, but you actually can make a single serving vanilla cake in five minutes or less! These quick-to-make cakes are often called “Mug Cakes”, which tend to be high in harmful saturated fats, sugars and allergy causing ingredients like dairy and gluten. This recipe however is a much healthier version of a mug cake, which includes healthy fats from coconut oil, is sweetened with honey and has at least double the protein, thanks to the almond flour!

Ingredients:
1/3 cup almond flour | 2 tablespoon unsweetened almond milk | 1 vanilla bean, scraped |
1.5 tablespoon coconut flour | 2 tablespoon unsweetened applesauce | 10 drops liquid vanilla stevia |
1/4 teaspoon baking soda | 1 tablespoon unpasteurized honey | |
1/4 cup egg whites or 1 egg | 1/2 tablespoon coconut oil, melted |
Directions
- Grab your favourite coffee mug, and lightly grease the insides with coconut oil.
- Using either your mug or a small bowl, whisk all of the ingredients together until fully mixed. Pour back into mug if you used a bowl.
- Place your mug in the microwave, and set your timer for 2-3 minutes. You can adjust the time depending on your microwave strength.
- Enjoy hot!
Make It This Way
You can make this recipe egg-free by substituting the egg with a flax seed egg.
Flax seed egg substitute:
The measurement below replaces one egg
1 tbsp finely ground flax seed
3 tbsp warm water
Combine both ingredients into a glass and allow it to sit for five minutes. Add to recipe as you would normally.
Try This
Try taking the cake out of the mug and serve it upside down, topped with chocolate sauce, whip cream and pecans or even some fresh, seasonal berries!
I have the unpopular opinion that I usually prefer vanilla flavours over chocolate (not always, but usually!) So this vanilla bean mug cake is so perfect for me and looks so delicious! I personally love making mug cakes when you are in the mood for a sweet treat but do not want to make a whole cake and then deal with the leftovers, because let's face it, I will just end up eating a whole cake in the matter of a few days! I love how quick and easy this cake is! It's definitely doable for the average busy person who really doesn't have alot of time on their hands. It is also so incredible that you can make this so fast and it's actually healthier than the ones that you would buy! This is such a great little treat and it barely takes any time to make at all!
