Apple Cinnamon Oatmeal Cookies

These apple cinnamon oatmeal cookies are the ultimate healthy treat for several reasons! The first one being, how can you say no to a cookie that is jam-packed full of nutrients and only has 57 calories! Secondly, they are the perfect treat to enjoy when you’re craving something to satisfy your sweet tooth! Even better, there are no refined sugars and they cater to a lot of special allergens.

Ingredients:

¼ cup sunflower butter | ¼ cup xylitol | ½ cup diced apple |
½ cup unsweetened applesauce | ½ teaspoon gluten-free pure vanilla extract |

½ cup uncontaminated rolled oats | ¼ teaspoon sea salt | |
¼ teaspoon ground cinnamon | ¼ teaspoon gluten-free baking powder |
Directions
Set your oven to 350F
- Mix all of your dry ingredients together into a bowl and stir to combine. Set aside.
- In a separate bowl, combine all of your wet ingredients, leaving out your diced apples for now.
- Combine both mixtures together and stir until fully incorporated. Mix in your apples.
- Using your hand of a big spoon, portion the mixture out onto a pre-lined baking sheet to form cookies.
- Bake for 12-15 minutes or until they have that nice golden glow.
- Serve warm or store in a container to enjoy when you need a sweet treat!
Make It This Way
This recipe is pretty forgiving, so you can switch it up to meet your own nutritional requirements. If you need a little more protein, then replace the applesauce with one egg. If you need more fiber, then replace the applesauce with a flax-egg (1 tablespoon freshly ground flax seed, mixed with 2 tablespoons of warm water. Just allow it to sit for five minutes before adding in normally to the recipe).
