Banana Chocolate Cake Squares

Can you think of a better combination to satisfy your sweet tooth than bananas and chocolate? We can. That’s why we are very excited to tell you that not only are these two things coming together in perfect harmony, but they are coming together with a third favourite word of ours: cake! That’s right – three amazing things all wrapped up into one healthy square. So grab your apron, get your over ripe bananas and lets get to work on creating a jaw dropping reaction when people see those three little words come to life!

Ingredients:

2 tablespoon chia seed, ground + 7 tablespoon water | ½ cup extra virgin coconut oil, softened | 2 vanilla beans, ½ teaspoon vanilla paste or 1 teaspoon pure vanilla extract |
¾ cup palm sugar | 4 bananas, mashed |

1 cup brown rice flour | 1 tablespoon ground flax seed | ½ cup chopped walnuts, optional |
¾ cup tapioca starch/flour | 2 teaspoon gluten-free baking powder | |
3 tablespoon cacao powder or carob powder | ¼ teaspoon sea salt |
Directions
Preheat oven to 350F and line 8x8 pan with parchment paper/silicon-baking mat.
- In a small bowl add your water and your chia seeds, push aside for five minutes to let it thicken.
- Grabbing a large bowl, mix your palm sugar and coconut oil until smooth and well blended. If you’re using an electric beater it will take a couple minutes, longer by hand.
- In the same bowl add the bananas, vanilla and chia mixture.
- In a separate bowl combine all the dry ingredients until fully mixed. Then, take this mixture and slowly add it to your wet ingredients. Stirring constantly to ensure everything is properly incorporated.
- If you’re using walnuts, go ahead and toss those in – extra Omega’s never hurt anyone!
- Grabbing your pre-lined pan, scrape batter into it. Using a spatula, smooth out the batter so your squares come out looking as perfect as they’ll taste!
- Place in the oven and bake for 40-50 minute, or until golden brown. Feel free to use the toothpick test as well to ensure they are thoroughly baked. Once done, remove from oven and sit to cool before cutting into squares and devouring.
Make It This Way
Get the true cake-effect: if you’re not fussed about having this recipe egg-free, feel free to replace the chia mixture for 2 large eggs instead. This will give you the cake-y texture you’re after.
Palm sugar is also called coconut sugar and is a low-glycemic option to white sugar. However, if you don't have palm sugar on hand, you can substitute it for regular sugar, sucanat or xylitol. You can also cut down the amount of sugar used in this recipe if you use an extra banana!
Try This
The only thing that goes better with chocolate and bananas is… your favourite nut butter! Try adding a small dab to your square for an after dinner treat.
These banana and chocolate cake squares look so delicious and soft! I never heard of palm sugar before but it looks like a great alternative to the refined sugar I am used to using.
