Berry Supreme Yogurt Parfait

Whether you’re hosting a formal brunch, or you’re looking for a new Instagram-worthy photo, this parfait is sure to bring the taste, and the likes! We love the layers, and the room to get creative by adding in your own toppings or, dare we say it, by making your own yogurt and granola. Turn this breakfast into dessert by swapping out yogurt for your favourite dairy-free ice cream – now we’re talking!

Ingredients:

yogurt
2 cups dairy-free yogurt
raspberry sauce
1 cup raspberries, pureed1 teaspoon pure vanilla extract
2 teaspoon arrowroot powder, diluted in 2 tablespoon water¼ teaspoon lemon juice
granola
1 cup granola (try our heart healthy granola if you prefer to make your own!)
strawberry topping
2 cups strawberries, dicedzest of 1 lime2 tablespoon unsweetened shredded coconut
1 tablespoon apple juicejuice from 1 lime
2 teaspoon coconut sugar1 teaspoon mint, chopped

Directions

Strawberry topping: In a large bowl, combine all of your ingredients. To get the best taste, cover with saran wrap and place in the fridge for half an hour so everything can mingle together.

Raspberry sauce:

  1. In a small bowl, dilute your arrowroot powder – set aside.
  2. In a small saucepan over medium heat, bring your raspberry puree, vanilla and lemon juice to a simmer, mixing regularly for three minutes.
  3. Add in your arrowroot mixture and whisk, bringing the contents to a boil.
  4. Over the next few minutes, your mixture will thicken. Once it’s reached a good consistency, remove from heat and allow it too cool.

Bringing it all together: Divide raspberry puree by spooning equal portions into two glasses/serving dishes. Next, spoon in your yogurt, sprinkled with some granola and your strawberries. Repeat the yogurt, granola and berry mixture once more, and top with coconut and mint leaves. Serve right away! Note: After all this, you should probably admire your work before diving in to take a bite!

    These berry supreme yogurt parfaits looks so fancy! They remind me of the movie set breakfasts that you see characters eating, which always looks so delicious! They would be perfect for a breakfast or a sweet and healthy dessert too! I love how there is lime in them as that helps create the perfect balance of sweet and sour, which is such a great flavour combination to eat! I also think chocolate granola would be so delicious with this. Thanks for sharing, these look delicious!
