Bison Bacon Spaghetti Squash Bolognese

Who said you had to give up your old time favourite dish just because you’re gluten-free and paleo? Not us! That’s why we love this hearty, meat sauce ‘pasta’ with the fresh, light feeling (and taste!) of spaghetti squash. Prepare this meal mid-week and enjoy the leftovers for lunch the following day – just be prepared, everyone in the lunch room will be asking you for the recipe within minutes!

Ingredients:
1 large spaghetti squash cut lengthwise, seeds discarded | 3 cloves garlic, minced | 5 1/2 oz. tomato paste |
1 tablespoon extra-virgin coconut oil | 2 teaspoons dried oregano | 1 bay leaf |
1 large red onion, chopped and diced | 1 lb. grass-fed bison, cooked | sea salt and freshly ground pepper, to taste |
3 carrots, diced | 2 -28 oz. can diced tomatoes | ¼ cup lite coconut milk |
2 celery sticks, diced | 7 pieces of beef bacon, cooked | fresh parsley, for garnishing |
Directions
Preheat oven to 350F
- In a large pan over medium heat, heat up your coconut oil.
- Place your cut, and de-seeded squash face down on a baking sheet – place in the oven to bake for 30-40 minutes.
- Now that your oil is heated, toss in your onion, carrots, celery, garlic and oregano. You will want your onions to be translucent and your vegetables a little soft.
- Next, add in all remaining ingredients except your coconut milk and parsley. Bring this mixture to a boil and finally reduce the heat to a simmer and cook covered for 35-45 minutes. Stirring occasionally.
- In the last five minutes of cooking, add in your coconut milk, remove the bay leaf and leave uncovered.
- Remove your squash from the oven, and carefully use a fork to scrap out the squash into spaghetti like pieces – moving the fork with the lines of the squash. Place contents in a large bowl.
- Cover your spaghetti with your sauce, top with parsley and serve hot!
Make It This Way
We may not all have access to bison meat so if you don’t, substitute it out for your favourite ground meat, such as beef, turkey, pork or chicken.
You can make this recipe vegetarian and vegan by removing the meat altogether – it’s just as tasty!
