Chocolate Rice Pudding with Sweet Potato

Mmmm, nothing beats this sinful tasting, shockingly healthy chocolate rice pudding! Enjoy the deep chocolate flavor of carob powder in this high-fiber, high-protein rice pudding, with sneaky portion of hidden veggies. Sweet potatoes increase the nutrients in this recipe, making it a great way to jump-start your vegetable quota before you even leave the house! Enjoy this as your breakfast, a snack or as a dessert. Either way its sure to satisfy your rich chocolate cravings!

Ingredients:
1 ¼ cup water | 1 tablespoon chia seeds | ¼ teaspoon ground cinnamon |
¼ cup brown jasmine rice | 1 tablespoon coconut sugar aka palm sugar | ¼ teaspoon ground cardamom |
¾ cup non-dairy milk | 1 teaspoon pure vanilla extract | pinch ground nutmeg, and himalayan rock salt |
¼ cup finely grated raw sweet potato | 1 teaspoon carob powder |
topping | ||

handful carob chips and unsweetened shredded coconut |
Directions
- In a medium saucepan, bring your water, rice and salt to a boil. Once boiled, lower your temperature and bring uncovered rice to a simmer for 20 minutes. Once rice is tender, drain any excess water and return to the stove.
- Add in all remaining ingredients, except the sweet potato. Cook over the same simmering heat for another 20 minutes, stirring regularly to avoid burning. At the 15-minute mark, toss in your grated sweet potato and cook altogether for the few remaining minutes.
- Before serving, make sure you stir in your carob chips and serve warm!
Make It This Way
Some people prefer cacao powder over carob powder. If that sounds like you, then substitute the carob powder in this recipe for cacao powder. Cacao is considered a superfood because it is so high in vitamins, minerals and phytonutrients, however it does contain a small amount of caffeine and is more acidic in nature compared to carob. Carob is caffeine-free, contains less sugar than cacao and is more alkalizing.

This looks delicious I can't believe it is a breakfast food! Such a great idea to put sweet potato into the recipe for added nutrients and the chocolaty aspect of it also makes eating breakfast feel like dessert.
