Ingredients:

1 ¼ cup water1 tablespoon chia seeds¼ teaspoon ground cinnamon
¼ cup brown jasmine rice1 tablespoon coconut sugar aka palm sugar¼ teaspoon ground cardamom
¾ cup non-dairy milk1 teaspoon pure vanilla extractpinch ground nutmeg, and himalayan rock salt
¼ cup finely grated raw sweet potato1 teaspoon carob powder
topping
handful carob chips and unsweetened shredded coconut

Directions

  1. In a medium saucepan, bring your water, rice and salt to a boil. Once boiled, lower your temperature and bring uncovered rice to a simmer for 20 minutes. Once rice is tender, drain any excess water and return to the stove.
  2. Add in all remaining ingredients, except the sweet potato. Cook over the same simmering heat for another 20 minutes, stirring regularly to avoid burning. At the 15-minute mark, toss in your grated sweet potato and cook altogether for the few remaining minutes.
  3. Before serving, make sure you stir in your carob chips and serve warm!

Make It This Way

Some people prefer cacao powder over carob powder. If that sounds like you, then substitute the carob powder in this recipe for cacao powder. Cacao is considered a superfood because it is so high in vitamins, minerals and phytonutrients, however it does contain a small amount of caffeine and is more acidic in nature compared to carob. Carob is caffeine-free, contains less sugar than cacao and is more alkalizing.
