Creamy Broccoli Vegan Risotto

Who said you couldn’t enjoy a creamy risotto and be vegan! Just like all dishes that take time, this risotto is extremely delicious and definitely worth waiting for. Serve this as an entrée or pair it with another star-studded dish and get ready to hear the silence at the dinner table – who can be bother to talk when your meal tastes so darn good!

Ingredients:
1 tablespoon olive oil | 2 tablespoons freshly squeezed lemon juice | 3 cups chopped broccoli florets |
1 cup chopped red onion | 1-1 ½ cups risotto rice | sea salt, to taste |
2 cloves garlic, minced | 3 cups gluten-free vegetable broth | freshly ground pepper, to taste |
½ cup white cooking wine | 2 cups non-dairy milk | 3 green onions, chopped |
Directions
- Sauté your onion and garlic together in a large pan over medium heat. Onions need to be tender.
- On another burner, over medium heat bring your dairy-free milk and broth to a boil. Reduce heat to a simmer and cover.
- To your onion mixture, add in your wine and the lemon juice. Keep on heat until all the liquid has been cooked away.
- Next, add in your rice to your onions. Gently cook over low-medium heat for a few minutes.
- Measuring out 1 cup of your broth, pour it into your rice. Bring to a gentle boil, stirring just enough so that it doesn’t burn.
- Once that broth is absorbed, repeat the process with measurements of ½ cup of broth at a time, this process is lengthy – roughly 30 minutes or so.
- Keep 1 ½ cups of your broth in the saucepan, and then add in your broccoli. Keep repeating the process until all the broth is absorbed, and your broccoli is tender.
- Serve hot and garnished with green onions!

Make this dish ahead of time, and store in the fridge for up to three days, or freeze right away for up to two months – now you’ll always have a dish ready to go for those moments you need them most.

I am always looking for new dinner ideas and this one is a great idea. I love that it is healthy, and dairy free but still manages to be creamy. I love broccoli too, which may be an unpopular opinion, but even for those who are not the biggest broccoli fan this recipe makes it look delicious and will definitely add lots of flavour to the broccoli. This is a great idea and I definitely would love to try making it!

I can not believe that this recipe is actually vegan, I love finding dairy-free alternatives to recipes because it is easier to accommodate more people that way. great idea for a starter or as a main dish with some sort of protein on top of it too. I am sure this would be a great crowd pleaser as well!

Yes, not many creamy recipes are plant based, so it's nice to find some that are. Many experience inflammation when consuming dairy so having alternatives is always nice.
