Crispy Fennel Wedges and Hummus

Who doesn’t love a good snack every now and again? With these crispy grilled fennel wedges paired with a side of hummus, you’ll wonder why you ever used crackers in the first place! It’s so simple to make, yet so unbelievably tasty that even your guests will be impressed by chef-style appetizer. Not to mention with all the protein you’ll be getting from the chickpeas and the fiber in your fennel, this dish can aid in decreasing your risk of heart disease – bonus! Warm up the hummus and serve as an outdoor appetizer while enjoying a glass of wine with friends.

Ingredients:
1 fennel bulb, sliced into triangles | ¼ teaspoon salt | 1 cup hummus |

Warm up your BBQ
- Slicing the Fennel: for best results, cut your fennel bulb in half, vertically. You want to remove the core by cutting small triangles in the base of each half of your bulb. Slowly remove the layers like an onion, and then slice into triangle shapes as best as you can, it doesn’t have to be perfect!
- Take your triangles and place directly on the grill, or in a vegetable grilling pan. Coat with salt and grill for 2-3 minutes – you don’t want your fennel to go limp.
- Serve warm with hummus!

I am the type of person who loves dips, sauce, etc and will usually just grab something like a cracker or something with a neutral taste to enjoy the sauce with - if I am being mindful I will opt for carrots or celery but sometimes it can get boring. I love fennel and never thought to use crispy fennel wedges as a type of cracker, if you will, so this is such a wonderful and innovative idea!
