Gluten-Free Cinnamon Swirl Raisin Bread

Kick your cravings of carbs to the curb with this all-in-one gluten-free pan of goodness. Let the perfect amount of sweetness from the raisins take you back to good old days, only with the up to date health benefits. While this cinnamon swirl raisin bread is a little on the flatter, denser side of things, it makes it the perfect breakfast or post-work out snack, especially when smeared with your favourite nut butters. With 15g of protein and 14.5g of fiber in two slices, what are you waiting for – grab your apron and lets get started!

Ingredients:

1 ¼ cup water¼ cup raisins1 tablespoon coconut oil, melted
¾ cup chickpea flour¼ cup unsweetened shredded coconut1 tablespoon cinnamon + more for sprinkling
½ cup buckwheat flour1 tablespoon coconut sugar

Directions

Preheat oven to 375F

  1. Prepare a 9x9 pan by lining it with parchment paper or a silicon baking sheet – this helps for getting the bread out when it’s done baking!
  2. Measure out all ingredients in a medium-large sized bowl. Now either by using your own arm strength or an electric mixer mix the ingredients together. After a few minutes you should have the consistency that’s a little thicker than a pancake batter.
  3. Empty contents into your baking pan and sprinkle the top with the extra cinnamon. Make sure to use a spatula to get all the batter in the pan, it’s too good to waste.
  4. The bread takes roughly 30-35minutes to bake. You’ll be able to tell when it’s done when the sides turn brown, and the top of the bread starts to split.
  5. After removing from the oven, allow the bread to sit and cool for 10 minutes prior to lifting it out and cutting it into slices.

Make It This Way

For an extra healthy adventure, try grinding your own buckwheat flour. Soak hulled buckwheat groats in water for 15 minutes, rinse well and grind into flour by using a food processor, high-speed blender or a 200-250 watt coffee grinder. It's fresh, has no added fillers and it’s easy.

    Cinamon raisin bread is definitely underrated, this looks delicious and so simple to make! I love cinnamon in the morning so this would be so great for breakfast. I know there are a lot of health benefits to cinnamon and raisins also have great health benefits too which is great! I love how this is gluten free as well as it can accommodate more people.     Cinnamon Swirl Raisin Bread

    Bread making has become a new hobby of mine, as for many others, it started during quarantine but is something that I really enjoy and try to keep up with. I have tried the traditional bread, sourdough bread and have even tried adding a few flavours into my breads before so I love finding recipes that are different from 'regular' bread and incorporate fun flavours. Cinnamon and raisin's are a great combination for a breakfast bread too so this would be a great one to try.
