Gluten-Free Goat Cheese Crackers

A new healthy you deserves a new healthy snack, don’t you agree? We think so too. That’s why these health-inspired crackers don’t compromise on taste and will allow you to easily transition in to your old crackers-enjoying habits. However, unlike you’re typical store bought crackers you’ll be able to tell others exactly what’s in the ingredient list – and be able to pronounce them all too. If that doesn’t seem to good to be true, just wait until you taste them!

Ingredients:
1 cup brown rice flour, plus more for the counter | 3 tablespoon coconut oil, cooled | 1/3 cup water + more if needed |
½ cup white rice flour | 1 teaspoon dry mustard powder | 1 tablespoon white wine vinegar |
¼ cup arrowroot starch | ¾ teaspoon sea salt | |
2 tablespoon ground flax seed | 150 g soft unripened goat cheese |
Directions
- In a blender or a food processor, combine all dry ingredients: flours, starch, flax, dry mustard and salt until well mixed. It should have a crumble-like consistency.
- Now, add in your goat cheese – and blend until well mixed.
- With your blender or food processor turned on, slowly add in the water and vinegar. Do this slowly, and for roughly half a minute. We are trying to reach and dough-like consistency now, and if you feel it is too dry, add some extra water: one teaspoon at a time. Do this until your dough starts forming a ball on the inside of your mixture.
- Remove dough from mixture and transfer to a sheet of plastic wrap/parchment paper, and gently seal around the dough. Chill in the fridge for one hour.
- In the mean time, line a baking sheet with parchment paper or a silicon mat and set aside.
- After your hour is up, bring the dough to your counter top and preheat oven to 325F.
- Unwrap the dough, and separate into two. Whatever half you are not working on, wrap it up and place it back in the fridge for the time being.
- Now comes the fun part: rolling out the dough! Sprinkle some extra flour on your rolling surface, and have some near by for your hands and rolling pin. For best results, the dough should be rolled into 1/4-inch thickness. Now, depending on your utensils use a pastry knife, cookie cutter or a pizza cutter to make the dough into the cracker shapes you desire. Once they are cut, place on your set aside baking sheet. Setting them roughly ¼ inch apart from one another.
- Remove second half of dough from the fridge, and repeat the process.
- [Optional] to get the extra cracker look, gently use a fork to create holes in each cracker before they’re baked.
- At this time your oven should be up to temperature – bake for 18-22 minutes, or until the crackers are just starting to get a toasty golden look to them!
- Allow crackers to cool on a cooling rack before enjoying.
Make It This Way
Make this recipe dairy-free by substituting goat cheese with a dairy-free cream cheese, which can be purchase in specialty food stores.

Crackers make a good snack on their own, but if you’re feeling extra hungry try dipping them in a spread. This makes the perfect snack for on the go - store your left overs in a tupperware container or a sealed bag to ensure they stay fresh.
I had no idea that you could make crackers with goat cheese and I didn’t even think of doing so either but after seeing this I think it is a great idea to incorporate into a cracker recipe! So clever and looks so delicious too! What a great idea, thank you for sharing this recipe such a fun way to incorporate more nutrients into a cracker :) I think this would be a great staple to have in the pantry or cupboard and so nice knowing exactly what ingredients are in the crackers instead of the store bought ones! The idea of baking crackers with cheese actually inside & not have the crackers be somethig like Cheez-its is so awesome!! Spero is a wonderful and affordable vegan goat cheese if you would like a recommendation for plant-based and/or lactose intolerant folks. I agree with O that this would make a great pantry staple. Personally, I am excited to try a vegan version topped with a perfectly ripe avocado (sliced, of course) and sprinkled with Himalayan pink salt. Store bought crackers can be so bad for u sometimes and to be honest I always crave them and feel so bad after eating an entire pack sometimes! They are so addictive but so good! I love this alternative recipe that I can make that I know is good for me and that I won't have to feel guilty about eating! I eat a lot of crackers so this recipe will definitely come in handy for whenever I have those crackers cravings!
