Gluten-free Jam Rolls-Ups

This gluten-free, vegan piecrust is so simple to make and easy to use, you’ll find yourself baking pastries just because you can! It's also perfect for making these fun Jam Roll-ups that the whole family will love. The best part of it is, you can finally start using up those jam jars that are taking up your fridge space, because any old jam you have on hand will do. However, we recommend using fruit juice sweetened ones for a healthier pastry – whip up a batch and enjoy them with your morning coffee or share them around the office!

Ingredients:
3.5 tablespoon white rice flour | 1 tablespoon freshly ground flax seed | 1-2 tablespoon ice water |
3.5 tablespoon brown rice flour | 2 teaspoon palm sugar | 1/3 cup sugar-free, fruit juice sweetened jam |
1.5 tablespoon potato starch | 1/8 teaspoon himalayan rock salt | |
2 tablespoon arrowroot starch | 4.5 tablespoon soy-free earth balance spread |
Directions
Crust: Combine your flours, sugar and salt together into a food processor or blender. Slowly add in your butter, and mix until you get a light crumble consistency. Then, slowly continue adding your water, with the machine still running. This shouldn’t take more than a minute. Form the dough into a ball, cover in saran wrap and place in the fridge for an hour.
Rolls: Set oven to 375F and set aside a lined baking sheet. Roll your cold dough out into a rectangle shape, roughly 1/8” thick. Using a spatula, spread a thin layer of your favourite jam across the dough, leaving a ¼” space around the edges free of jam. Using a pizza cutter, or sharp knife, cut the dough into eight sections. Roll up the dough strips, and place on the baking sheet. Bake for roughly 20 minutes, or until lightly browned. Serve warm!
Make It This Way
Make Peanut Butter and Jelly Roll-Ups by adding a layer of organic, natural peanut butter first before you spread out your jam. Roll up the dough as described above and enjoy this classic combination with a cold glass of almond milk!
Try This
Make this dough ahead of time and use as a base for individual ramekin pies! Fill with fresh berries and bake – or store in the fridge for up to two days!
Jam rolls up are such an amazing snack or little dessert to have with tea or coffee in the afternoon! They remind me of summer time but of course can be enjoyed at any time of the year. I love how this recipe is filled with healthy ingredients and really incorporates a lot of great foods for you instead of bleached flour for example there is brown rice flour! I like that it is gluten free too so it is more inclusive!
