Moroccan Coconut Crackers

If you enjoy curry, you’re certainly going to enjoy these coconut crackers! By combining all the perfect Moroccan spices, and using chickpea flour these delicious squares make the perfect snack or can be creatively added to any meal. They’re a bit sweet with a great flavour that will keep your snacking addiction happy or guests impressed with your culinary skills – hey, we never said you had to tell them how simple they are to make!

Makes 2-4 Servings

Ingredients:

2/3 cup chickpea flour1 garlic clove, minced1/4 teaspoon turmeric
1/3 cup unsweetened shredded coconut1/2 teaspoon cumin1/4 teaspoon cardamom
1/2 cup lite coconut milk1/2 teaspoon coriander1/4 teaspoon mustard seeds
1/2 cup filtered water1/4 teaspoon saltpinch ginger, ground
1 tablespoon olive oil1/4 teaspoon lime zestpinch cayenne

Directions

Set your oven to 375F

  1. In a large bowl, combine all of your dry ingredients together until fully incorporated.
  2. Next, slowly add in your milk, water, oil and garlic stirring regularly to avoid clumps in the flour.
  3. In a pre-lined baking sheet, take the mixture and press it firmly into the bottom of the sheet. You will want to make it as even as possible. Tip: if you think the mixture is spread too thick across one baking sheet, divide the mixture into two – this will give you thinner, crispier crackers. Just make sure to adjust baking time to accommodate.
  4. Place in the oven and bake for roughly 20 minutes, or until you notice the dough starts to crack.
  5. Remove from oven, and using a sharp knife or pizza cutter cut the dough into cracker shapes. Place back on the baking sheet and bake for another 10 minutes, flipping at the five-minute mark. Allow crackers to cool before enjoying or storing in an airtight container!

Make It This Way

If you love coconut but are feeling a little overwhelmed by the amounts, try using almond or soy milk instead (however this would then alter the recipe from nut-free or soy-free!).

You can substitute the olive oil for coconut, avocado, grapeseed or sunflower!

If you’re having trouble finding chickpea flour, some places often refer to it as ‘besan flour’ – commonly found in most health food stores!

Try This

Crunch these crackers up and use as croutons in a salad. You could even use the dough base as a lining for a curry pot-pie!

    Coconut Crackers

    These Moroccan coconut crackers have all the wonderful spices of some of my favourite dishes and would be perfect along side a large variety of lunch and dinner dishes too! I love the idea of making your own homemade crackers and would have never really thought to do so, these recipes make it so easy and simple to follow and allows you to add so many healthy and nutritious ingredients into them! Great flavour combinations and I would love to try these dipped into some butter chicken sauce or soups or currys!

    These homemade crackers would be great with some of the other recipes on this page like the beet and goat cheese spread or spinach Tarragon dip. It is a great idea that this recipe uses chickpea flour because it is a great way to sneak in more nutrients and is great for your health too. The lime zest in these crackers is such a cool addition as well and pairs nicely with the accompanying spices.

    Neat Flavour Profile

    I would have never thought of this flavour profile for crackers. I've been wanting to make some healthy homemade crackers so this recipe with be a perfect forray into that endeavour. I love that they include turmeric which is so healthy for you. I'm thinking of substituting some of the chickpea flour for almond or coconut flour to make these keto-friendly. It seems like this recipe could easily be switched up by using the first five ingredients on the list and then changing up the spices for all different kinds of cracker varieties.
