No-Bake Apple Spice Freezer Bars

We know why you’re here: you hate baking and you’re in need of that perfect snack that will get you through the week. Thankfully you’ve come to the right spot! With nuts, seeds, dried fruit and crunchy rice cereal all mixed with those nostalgic apple pie spices flavours, these bars are tasty and healthy. They even have the perfect combination of carbohydrates, fats and proteins for a post-workout snack that will leave you feeling energized and satisfied. The bonus – these bars will last in your freezer for up to three months, so you'll always have a healthy snack on hand.

Ingredients:
1 cup enjoy life crunchy rice [could substitute for rolled oats making it not gluten-free] | 2 cups dried apples, diced | ¼ teaspoon all spice |
1 cup sunflower seeds | 3 tablespoon ground flax | ½ tablespoon cinnamon |
1 cup almonds [crushed] | ¼ cup molasses | ½ teaspoon nutmeg |
1 cup raisins | 1/3 cup brown rice syrup | pinch ground cloves |
Directions
- Using a blender or food processor, crush your whole almonds, or almond chunks until you have reached desired consistency.
- Using a large bowl, to avoid spillage, mix the crunchy rice, sunflower seeds, your freshly crushed almonds, raisins, apple and flax. Stir until well combined and leave to the side for now.
- In a medium saucepan combine all other ingredients: molasses (or see below for substitution), brown rice syrup, and all of the spices. You’ll want to make sure these mix well together. Heat on low for roughly five minutes, or until it starts to bubble up.
- In the mean time, grab and line a 9 x 13 pan with parchment paper or a silicon-baking sheet.
- Now that your sauce-like mixture is warm, pour its contents in the large bowl with your dry ingredients. Mixing thoroughly so everything is well combined.
- Using a spatula, scrap batter into your lined pan and press firmly so you remove all air pockets between it and the pan. Once mixture is evenly distributed, place in the fridge for 30 minutes. Note: if it’s a Canadian winter outside you could also cover it with foil and leave outside!
- Once the pan and the mixture are cool, lift out your mixture and cut into bars. For best keeping, wrap bars individually with plastic wrap and then place all of them in a Ziploc bag. Store in the freezer for up to three months.
Make It This Way
If you don't have molasses on hand, you could always substitute it with any other kind of liquid sweetener you have in your cupboard, such as; maple syrup, honey, raw agave or yacon syrup.
If you're not a fan of raisins, give dried cranberries a try!
Try This
This bar packs easily, and would make a great snack between lunch and dinner, post-gym or on a hiking trip. If you plan on using this bar to break up over your morning yogurt, pull it out of the freezer before hand to allow it to get to room temperature first.
I love how this recipe for apple spice freezer bars is no bake! This makes it so much simpler and quicker to make, and I love and easy recipe! I love how they give alternative to some ingredients as well like the crunchy rice can be swapped out for rolled oats, I never heard of crunchy rice before so I am very curious to try it out and see what it is like but I do love bars with a nice crunch to them! The perfect combination of chewy and crunchy!
