Non-Butter, Butter Cookie Surprises

We dare you try these butter cookies and guess the ingredient list, because chances are you won’t believe it has no butter! That’s right, these cookies are the reason you shouldn’t judge a cookie by its cover. While it may seem like it has the same shape and texture as a traditional butter cookie, these little lumps are surprisingly dairy-free and gluten-free. The best part about them however is the even sweeter surprise waiting in the middle – you’re very own date!

Ingredients:
2 ½ cups almond flour | ¼ cup coconut sugar | ¼ teaspoon celtic sea salt |
3 medjool dates, pitted, quartered, roll each quarter into a ball | 1 flax egg [1 tablespoon fresh ground flax + 3 tablespoon water] | |
¼ cup coconut oil, melted | 1 tablespoon vanilla extract |
Directions
Preheat oven to 350F + pre-line your baking sheet with parchment paper
- Prepare your flax egg by mixing ground flax seed and water in a small bowl. Set aside.
- Combine your dry ingredients: flour, sugar and salt until everything is thoroughly mixed.
- Using a larger bowl this time, combine all other ingredients, including your flax egg – everything except the dates. Stir well. Once incorporated, slowly add your dry ingredients into the mixture, mixing thoroughly.
- Now that you’ve got your dough, separate it into two sections. Roll them both into a large ball and cover with parchment paper and place in the freezer for roughly 20 minutes. This will help firm up the dough and make it more manageable.
- Remove your dough from the freezer. Using your hands, grab a cookie size portion and flatten it, making a regular cookie. This is when you will want to add the date to the middle of your cookie. Once added, slowly fold in each side of the dough around it and gently roll with your hands. Put cookie on the baking sheet and slowly flatten, making sure you do it just enough so that the date isn’t exposed. Repeat with each cookie.
- Toss your cookies in the oven and bake for 10-12 minutes. Once you start to smell the delicious scent, and once they have the golden glow, you can remove from the oven and let them cool before eating!
Make It This Way
If you prefer, you can use 1 egg in place of the “flax egg” in this recipe. The recipe will no longer be vegan or egg-free, but will taste just as great. Flax eggs are often used as a substitute for eggs in vegan recipes, so go ahead and try it.

Who doesn't love delicious buttery butter cookies?! Having the option to make the same great tasting, soft and chewy butter cookies but without the butter is amazing! I always love a dairy-free and vegan alternative to baking and this one seems so amazing.
