Non-Potato Maple Mash

Do you ever get cravings for a mashed side dish, only you don’t have any potatoes? We completely understand the frustration. Thankfully this non-potato mash is just the thing you need to get your meal plans back on track. By using turnips and carrots, with a tiny bit of sweetness from maple syrup, this dish is not only healthy and delicious, it’s easy to make and pairs perfectly with a protein.

Ingredients:
3 medium raw turnips, chopped | 2 tablespoon maple syrup | |
4 cups carrots, chopped | 2 tablespoon extra virgin coconut oil |
Directions
- Chop your carrots and turnips into smaller pieces, making it easier for them to soften faster. Place in a large pot filled with water, and bring to a boil over medium heat.
- After roughly 20 minutes, your vegetables should be nice and soft. Do the fork-piercing test if you’re uncertain. Remove from heat, and drain the water.
- Place vegetables in a large bowl; add in the maple syrup and coconut oil. Mash with a hand masher. Sprinkle with some salt and pepper – serve hot!
Make It This Way
For more of a hearty mash, try adding in a little sweet potato to your vegetables. If you do, just be sure to peel them first.
Give this side dish some added zing by stirring in a little dried ginger, and minced garlic.
