Overnight Coconut Chia Delight

The best meals are enjoyed when you did very little to cook it, or in this case – nothing! Enjoy this overnight chia pudding as a breakfast, dessert or snack. Thanks to the little, mighty chia seeds superfood, you will get plenty of protein and many essential nutrients when you enjoy this tasty treat. With it’s fresh berries and the tropical tastes of coconut you’ll want to enjoy this time and time again!

Ingredients:
1/2 cup lite or full-fat coconut milk | 1/2 cup fresh berries | 1 tablespoon unsweetened shredded coconut |
1/2 cup unsweetened almond milk | 1 tablespoon chia seeds | 2 drops liquid stevia |
Directions
- Wash and slice your berries, and set aside to dry.
- In a glass container with a lid (a Mason Jar works well) combine all of your ingredients and stir to combine, or seal and shake!
- Set in the fridge overnight to set, and serve into two bowls when you’re ready to enjoy them in the morning!
Make It This Way
If you prefer to use another method of sweetener, try swapping out your stevia for 1-2 tablespoons of maple syrup, honey or yacon syrup!
Optional add ins: dried fruit, such as cranberries, blueberries, cherries or currants!

If you’re running late on a Monday morning, just grab the jar and enjoy this breakfast at your desk!
Very simple and quick recipe for a satiating and healthy low sugar breakfast or dessert. After mixing all the ingredients together, I recommend shaking the jar a second time after about 5 minutes to avoid clumping as well as adding some cinnamon! You can use any type of plant-based milk but it is best to use something that is a little heavier. I like to make my own walnut or macademia milk as it is very thick and creamy.

I have made chia pudding like this for a while now but I have never thought to sweeten it with stevia. I usually use maple syrup but I don't always have it on hand. I also often blend frozen fruit (like mangos or strawberries) with the milk and then add cut up fruit to it as well. Top with granola and nuts and it's a really delicious breakfast or dessert.

This overnight coconut chia delight is such a great an easy breakfast or snack that you can prepare in multiple batches and grab and go throughout the week! I usually see overnight chia seed pudding that does not incorporate much flavor to it but the coconut is such a brilliant idea to incorporate more healthy fats, and flavours, into your overnight chia seeds meal! I love this idea and it seems like it would be the perfect filling breakfast to grab and go.

Overnight oats or chia like this, are great for those busy morning breakfasts. They're filling and offer many nutrients. This would also make for a great post workout meal if you add protein powder to the mix.

This recipe is so simple, but also so versatile and healthy. I love chia pudding. I often mix kefir, maple syrup, cacao powder, and chia and it's delicious and so good for you. I love eating things with a variety of textures and I find chia also adds an interesting texture to various recipes. I also add chia to overnight oats for extra nutritious value and to up the fiber content. Chia jam is so easy to make too and yummy.
