Pear Feta and Almond Salad

Spruce up your Sunday brunch by adding a refreshing salad to your spread. This salad is a great way to use up your pears, or add a little crunch to your plate. While this salad does have a creamy factor from the feta, it still tastes light and seasonable with just the right amount of citrus and sweetness. Try swapping out pears for apples if you don’t have any at home!

Serves 4-6

Ingredients:

dressing:
1 teaspoon unpasteurized honey1 teaspoon fresh lemon juicepinch sea salt
salad:
2 cups pears, sliced 2 tablespoon raw slivered almonds
1/3 cup feta cheese crumbles1 tablespoon raisins

Directions

  1. To make your dressing, whisk all ingredients together in a small bowl. Set aside
  2. In a large bowl, combine your sliced pears, feta, almonds and raisins together. Mix in your dressing and toss to combine.
  3. Serve!

Make It This Way

Try making this salad dairy-free and vegan by replacing the feta for a non-dairy cheese.

You can substitute the honey for maple syrup, yacon syrup or agave if you prefer.

Get creative – if you don’t like almonds, use a different type of nut, and the same goes for the dried fruit!

Try This

Serve this salad on it’s own, or make it go further by using it as a nice topping to your already fresh greens.

    I am always looking for healthy and delicious salads to serve my family. This is a very interesting salad with a variety of tastes and added crunch. Providing alternative foods for the novice salad maker is very helpful. This salad has a taste for everyone and the nutrients are many to be enjoyed. I am a National Nutrition customer and this is the first time I am reading the recipes which provide food packed with nutritional value. Now I am aware of this site, I will be referring to it in the future.

    Pear Almond Feta

    This pear, feta, and almond salad is a great combination of ingredients that I would not of normally thought to put together. I love adding feta to my salads because it taste great and adds a little but of salty-ness that I love. The almonds are a great idea for a healthy addition of healthy fats and proteins to tide you over and the pears add a nice sweetness and crunch to the salad as well. This is great idea of a nice fresh spring salad!
