Savory Apple Muffins

Is it a breakfast muffin, or is it a dessert? Whichever way you eat it, you’re going to enjoy these sweet and savory apple and cheddar muffins! With lots of fiber from the apples – and even more so if you leave the peel on from organic granny apples, you’ll feel fuller longer when you eat them as part of a nutritious breakfast! Got carried away and made too many? Put them in a basket and bring them to your office for a teatime snack, everyone will love the gesture!

Ingredients:

1 cup unsweetened, not-from-concentrate apple juice | 1 egg | 2 tablespoon unpasteurized honey |
1/2 cup gluten-free date sugar | 1/4 cup coconut oil, melted |

3/4 cup almond flour | 2 tablespoon milled flax seed | 1 teaspoon ground cinnamon |
3/4 cup brown rice flour | 1 tablespoon gluten-free baking powder | 1/4 teaspoon ground nutmeg |
3/4 cup arrowroot starch | 1/4 teaspoon sea salt |

1 cup diced granny smith apple (approximately 1 medium-sized apple) | 1 cup/package of happy days goat milk cheddar cheese, grated |
Directions
Set your oven to 375F
- In a large bowl, combine all of your dry ingredients and mix together. Set aside.
- In a separate bowl, combine all of your wet ingredients until well incorporated.
- Slowly combine both of your bowl mixture together, stirring just enough to ensure there are no pockets of flour not being mixed in.
- Using a spatula, fold in your apples and cheddar cheese.
- Grabbing a lightly oiled muffin tin, spoon your mixture until ¾ of the way full. Place in the oven and bake for 20-25 minutes – do the toothpick test if you’re unsure if they’re cooked!
- Serve warm!
Make It This Way
If you’re having a hard time finding unsweetened, not from concentrate apple juice, try making your own with a few apples tossed into your juicer for an even fresher taste!
You can make this recipe egg-free by substituting the egg with a flax seed egg.
Flax seed egg substitute:
The measurement below replaces one egg
1 tbsp finely ground flax seed
3 tbsp warm water

I personally love apple muffins and between apple muffins and banana chocolate chip, those are my favorites! Something about the apples makes them so soft and chewy. I love how this recipe contains flax seeds as well, they are a great source of fiber and Omega 3 and have so many beneficial health benefits to them, incorporating them more into my diet is something that I have been really wanting to do so I love when I find good recipes that include them.
