Simple and Healthy Maple Flax Cookies

You wouldn’t be a true Canadian if you didn’t love the taste of maple, and these cookies are no exception! With them being low in fat and high in nutrients like fiber, protein, minerals and antioxidants, there’s no reason not to give into your maple cravings. Whip up a batch for Canada day or just enjoy them as a treat because you proudly can!

Ingredients:

1/4 cup light maple syrup | 2 tablespoon grape seed oil | 2 tablespoon apple sauce |

1/3 cup teff flour | 1 tablespoon whole flax seed | pinch himalayan rock salt |
1/3 cup light or green buckwheat flour | 1 tablespoon ground flax seed | |
1/3 cup arrowroot powder | 1/2 teaspoon ground cinnamon |
Directions
Preheat oven to 350F
- Dry ingredients: mix all of these ingredients together in a large bowl. Set aside.
- Wet ingredients: mix all of these together thoroughly in a separate bowl.
- Slowly bring both mixtures together into one large bowl, making sure to mix thoroughly so there are no pockets of hidden flour!
- Using your hands, or a large spoon, shape dough into cookie shape and place on a pre-lined baking sheet. Making sure to leave enough space between each cookie so they can expand.
- Place cookies in the oven and bake for 12-14 minutes – they will be done when they have that nice golden glow. Allow the cookies to cool before diving in!
Make It This Way
With so many gluten-free flours, it’s hard to stalk up on all of them. So if you don’t have the specific ones listed, don’t fret. The teff and buckwheat flour in this recipe can be substituted with brown rice flour or chickpea flour.
The arrowroot powder in this recipe can be substituted with tapioca powder or sweet rice flour.
Baking Tip: If you want that wavy pattern on your cookies, make sure to roll dough into a ball first and then flatten onto the baking sheet. Forming your hand into a peace sign, use your two fingers to make a slight indent on the cookies before tossing in the oven!

This recipe for healthy maple flax cookies looks delicious! I am starting to think I need to replenish my stock of flax seeds now because I can see how healthy they are for you! I used to only put them in my oatmeal so it is nice to find other recipes that I can use them in and so they won't go to waste! These cookies look so delicious, I love anything with maple in it too!
