Spaghetti Pizza Bake with Basil Tomato Sauce

Have you ever felt like having pasta for dinner, but at the same time had a huge craving for pizza? Who doesn’t! But why choose between the two when there is a dish that combines both of your favourite Italian dishes into one! With its dairy-free cheese and rice noodles, this pasta is one hundred percent gluten-free and vegetarian so you can feel better knowing that while you’re satisfying your cravings, you’re not cheating on your lifestyle choices.

Ingredients:
pizza crust: | ||

8 oz. rice spaghetti | 1 egg, beaten | ½ teaspoon extra-virgin olive oil |
1 cup grated non-dairy cheese | 1 bulb garlic, roasted | ¼ teaspoon sea salt |
pizza toppings: | ||

1 onion, sliced | 10 basil leaves, julienned | oregano leaves for garnish |
1 teaspoon extra-virgin olive oil | 4 tablespoons sun-dried tomatoes | |
1-1/2 cup tomato basil sauce | 1 cup grated non-dairy cheese |
Directions
Set your oven to 400F
- Grab your bulb of garlic and peel away the flaky skins, leaving the ones that are attached to each individual bulb. Cut the top off of the entire bulb so that it exposed the garlic. Leave the bottom in tact, holding everything together.
- Place garlic on a baking sheet and drizzle with olive oil. Turn upside down so the cut end is on the sheet. Bake for 30-35 minutes. Once done, remove from oven and set aside to cool.
- Adjust your oven to 350F – this would be a good time to grab your pie plate and lightly oil it. Set aside.
- Cook your pasta, according to the package.
- In a separate pan, heat up some olive oil on medium heat. Add in your onions and sauté for 5-10 minutes. Stirring regularly to avoid burning.
- Now that your pasta is cooked, add it to a large bowl. Mix in your whisked egg, non-dairy cheese, salt and the smashed roasted garlic (do this by squeezing the bulb until the cloves come out, and mash lightly with a fork) Stir well.
- Using your tongs, place spaghetti into your pie pan, and press firmly. You want to compress the pasta together as much as you can!
- Spread your pizza sauce on top of the noodles as you would a normal pizza. Sprinkle your toppings on of the herbs, sun dried tomatoes and non-dairy cheese.
- Cover the dish with foil, and bake for 30 minutes – you want to ensure that the egg has cooked. Tip: To get that cheese a little browned on the top, for the last five minutes switch your oven to broil and remove the cover. That should do the trick!
- Allow the dish to cool for a few minutes before slicing up and serving hot!

To avoid getting any added sugars in this dish, why not try making your own homemade marinara sauce? You can even make extras to use in other dishes throughout the week.
If you aren’t worried about this dish being vegetarian, try adding some sliced up pepperoni into the dish, or some meatballs to go on top!

What!! This is such a cool idea! I would not have thought to make spaghetti pizza and I certainly did not imagine it to be like this, YUM! This is such a cool idea, I would not have thought of it but it looks delicious and like such an amazing compromise when you cannot decide on what yo have for dinner. I also think this would be great with additional toppings like you would with a pizza or even seperating it into fours and having four different toppings!
