Sugar-Free Coconut Macaroons

If you just went sugar-free, but you’re still having cravings for something sweet – then we’ve got just the thing for you! You’re going to love these naturally sweetened apple coconut macaroons that use fresh applesauce, shredded coconut and shredded apples. Apples are so good for you because they are high in fiber, antioxidants and vitamin C, which make them good for lowering cholesterol, boosting immunity and overall heart health. Ingredients:
2 ½ cups shredded unsweetened coconut | 3 tablespoon almond flour | pinch of salt |
1 ½ granny smith apples – 1 apple shredded and 1/2 of the other apple blended | ½ teaspoon pure vanilla extract | |
1/3 cup almond butter | ¼ teaspoon natural almond flavor |
Directions
Set your oven to 325F
- In a large bowl, combine all of your ingredients together and whisk until well combined.
- Using your hands, take portions of the mixture in your hand and form them into a ball. Place them onto a pre-lined baking sheet, and use a fork to gently flatten them. Repeat until all the mixture is gone.
- Place the macaroons into the oven and bake for 10-15 minutes – when they are golden brown in colour they are perfect!
Make It This Way
To change the flavor of these macaroons, switch up the ingredients. To make an “apple-pie” flavored macaroon, try swapping out the green apples for red, and the replace the almond extract for ¼ teaspoon of cinnamon and a dash of nutmeg!
