Sweet Potato Smoothie

We know what you’re thinking - the thought of adding a starchy vegetable to your morning shake sounds downright wrong, but you can’t knock it till you’ve tried it! Trust us, you'll love the natural sweetness it brings, and you’ll be tickled to know it’s loaded with 8 grams of fiber. This drink also packs a punch by being high in nutrients like vitamin A and vitamin C, which boosts immunity and reduces inflammation. I think the real question is not ‘why are we adding potato to a smoothie’ but, ‘why haven’t we been doing this all along?’

Ingredients:
1 cup water | ½ apple | 1/8 teaspoon nutmeg |
½ cup sweet potato, cooked and cooled | 1 tablespoon unpasteurized honey | 4 ice cubes |
1 small banana | ¼ teaspoon alcohol-free gluten-free pure vanilla extract |
Directions
- In boiling water, cook your sweet potatoes until they are easily poked with a fork – roughly five minutes.
- While you’re waiting, slice up your apple and banana. Place in the blender.
- Combine all over ingredients into the blender – including your drained sweet potato.
- Blend until smooth. Drink right away!
Make It This Way
If you don't have honey on hand, you could substitute it with any liquid sweetener you have in your cupboard such as, maple syrup, honey, molasses, raw agave or yacon syrup.

Make this a gut-healing smoothie by adding probiotic powder, a scoop of glutamine powder and a tablespoon of chia seeds!
The idea of putting a sweet potato into my morning smoothie just sounds so, so, so well - wrong! I was shocked when I came across this recipe as I was looking for new breakfast ideas but I would be lying if I didn't say it intrigued me and finally after reading the introduction, it got me very curious about trying it! I can imagine that the sweet potato fills you up, not to mention adding much more nutrients to your smoothie! I am usually hungry shortly after my smoothies so this would be an interesting way to see if it would be my new solution! Cool recipe! Thank you for sharing! :)
