Warm Vegetable Medley Salad

This two-step process is the easiest way to get your vegetables! Change up the way you eat your salad with this warm, vegetable medley. It’s a great way to go back to the basics and enjoy the wholesome taste of vegetables, especially when you combine root vegetables with a delicious dab of coconut oil and veggies original seasoning: salt and pepper!

Ingredients:
2 carrots, julienne cut/matchstick | ½ yellow onion, sliced | 1 teaspoon extra virgin coconut oil |
2 parsnips, julienne cut/matchstick | ½ cup snow peas | sea salt + freshly ground pepper |
Directions
- Slice your vegetables and place them altogether in a steamer. Steam vegetables for five minutes.
- Remove from steamer and place in a serving bowl. Mix in your coconut oil, salt and pepper. Stir and serve hot!
Make It This Way
Add some fresh herbs to your veggies for an added burst of flavour, such as thyme or oregano. Swap out some of these vegetables for your other favourites, such as broccoli or asparagus, or just add them into the mix!

I am a huge fan of salads and love eating them but sometimes you want to eat something that is warm instead of the cold crisp salads that you usually think of. This is the perfect solution to that! You can have nice warm vegetable medley salad at any point of the year, and now you can have them in the winter too while still feeling the same warm and good feeling you get with soups but in salad form! Great idea!
