Recipes
Coconut Blueberry Muffins
1 3/4 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon cardamom
1/4 teaspoon salt
1 large egg
1/2 cup ORGANIKA Organic Coconut Palm Sugar
3/4 cup cocnut milk
1/2 cup ORGANIKA Coconut Oil, melted
1/2 cup shredded coconut + additional for topping
1/2 cup blueberries
1 teaspoon vanilla extract
Directions:
Preheat over to 350 F. In a large bowl, mist together flour, baking powder, baking soda & spices. In a separate bowl, lightly beat egg and mix with sugar, coconut milk, oil & vanilla. Add dry ingredients to wet and fold gently. Then fold in your shredded coconut & blueberries. Divide mixture among 12 muffin cups and bake for 20 minutes or until tester comes out clean.
Let cool for 5 minutes before removing from muffin tins & enjoy!

Although I do like the flavour what I appreciate most about palm sugar is that it doesnt cause a blood sugar crash for me like regular white sugar. I make dark chocolate paleo cookies using this sugar and they taste good and dont give me crashes.
