Baked Mushroom Pizza Bites

If you are trying to break your pizza addiction, look no further! This tasty recipe is surprisingly simple, is good for you and has all the flavour of homemade pizza with a delicious crispy topping. You'll want to make them again and again.

Ingredients:

| 16 oz. cremini mushrooms, stems removed | 1 teaspoon lemon juice | 1/8 teaspoon ground pepper |
| 1 tablespoon extra virgin olive oil | ¼ teaspoon himalayan rock salt |
| crispy garlic topping | ||

| ½ cup gluten-free bread crumbs | 1 teaspoon dried parsley | ¼ teaspoon herbamare |
| 1 tablespoon extra virgin olive oil | teaspoon garlic powder |
| filling | ||
|---|---|---|
| ¼ cup daiya cheese | 6 slices of gluten-free salami | ¼ cup fresh basil leaves |
| ¼ cup sun dried tomatoes in oil | 1 green pepper | ¼ cup fresh oregano leaves |
| 6 slices of cooked bacon | ½ cup spinach, chopped |
Directions
PREHEAT OVEN TO 450°F Mushrooms- In a medium bowl, toss mushrooms with oil, lemon juice, salt, and pepper. Grab a baking sheet and place mushrooms hollow side down on a baking sheet and bake for roughly 10 minutes, until you see a good amount of juices being removed from them. Turn mushroom caps over and roast until well browned, about another 10 minutes. Remove from oven, and set aside to cool while you’re preparing the mixture.
- While mushrooms are baking, mix these ingredients in a small bowl and set aside.
- Process all ingredients in the food processor until smooth. Set aside.
- Adjust oven temperature to 400°F
- Take a small tablespoon of filling and using your fingers, form into a ball.
- Press the ball into the mushroom cap.
- From here, with the filling side down, press into the bowl of garlic topping, making sure to coat the entire surface of the filling.
- Repeat with all mushrooms and arrange topping side up, on baking sheet.
- Bake until filling is hot and topping is golden brown, about 10 minutes ‑ you could also switch the oven to a light broil to get the desired crispiness.
- Allow five minutes to cool before eating.

While we think this makes a great appetizer, it also has several tasty ways for it to be served. Try adding them to a salad to make a complete meal, using as a side dish or use them as a mid-day snack. Pre-Make Mushrooms: Make the mushrooms ahead of time by roasting and stuffing up to 3 days in advance. Just don’t top them with breadcrumbs until you’re ready to heat and serve the mushrooms. Store stuffed mushrooms, stuffing side up, on a paper towel-lined plate in the refrigerator covered tightly with plastic wrap.



Yum, these baked mushroom pizza bites are such a great idea for an appetizer or even for a meal if you eat enough of them, which I am sure is not hard to do! I wonder if making these on those big portobello mushrooms would also be good and that way it could be like an individual sized pizza too! This recipe for mushroom pizza bites is a great alternative for a healthy pizza without the weighed down feeling I sometimes get after eating a heavy and greasy pizza. So these mini little appetizers are a great solution to still getting that good pizza flavour in and satisfying those pizza cravings but making it a healthier option and easy to serve to guests or for a fun dinner addition too! The mushrooms are a great idea if you are gluten free as well.

This is a delicious keto option if you go easy on the breadcrumbs. Mushrooms already have so much umami to them, but the sun-dried tomatoes would add even more umami, and I never would have thought to use them in a stuffed-mushroom recipe! I'll use real cheese and omit the meat, then add in some black olives and this recipe will be perfect. Can't wait to try it out. My meat-loving husband loves stuffed mushrooms so it's a dish that I can cook as a pescatarian that we will both love.

I love this healthy pizza alternative! I made the vegetarian version and it's so good! I always love when there are healthy alternatives for my favorite not so healthy food faves. I love that the ingredients are not too daunting and that the instructions are very straight forward and easy to follow but most of all I love that this recipe is full of healthy ingredients and that there is a nutrition label as well which is pretty hard to find for homemade recipes.

Wow! This looks like such a yummy as well as healthy recipe!! Daiya plant-based cheese is really great :) What variety of Daiya cheese do you think is best for this paticular recipe here? My thoughts are that either a Swiss or Mozzerella would be lovely. Also, if anyone else is plant-based & reading this recipe/the comments on this recipe, I would highly recommend Sweet Earth vegan bacon which I find to be a great substitute!

Great suggestions to make this recipe vegan and dairy-free. We would suggest either their mozzarella shreds or their tex-me shreds to add some extra flavour.
