What Are Kelp Noodles?
Kelp noodles typically have 3 ingredients; kelp, sodium alginate and water. Kelp is edible brown seaweed and sodium alginate is a salt derived from seaweed. These simple ingredients make these noodles a healthy alternative to pasta because seaweeds are nutrient-dense and are full of minerals. Kelp noodles contain zero fat, zero cholesterol and zero sugar. On top of all that, they are gluten-free! These noodles also contain no protein and have only 1 gram of fibre per serving, so it is best to eat them with natural sources of protein and fibre, like legumes to balance your meal.
How To Use Kelp Noodles

Kelp noodles sound amazing! I first heard of them and immediately was curious about what they are and was a bit uncertain but after reading these and hearing that not only are they very low in calories, and do not even require any cooking, as well as all of the great health benefits they have of having Iodine in them! Thank you for including the tip to not over-eat them because of the Iodine content in them, something I would not have otherwise known!

Kelp noodles are really awesome as a more nuticious noodle option: I think that the leafy greens of the sea (such as algaes with omega 3 fatty acids and protein rich plants like duckweed) are underrated and kelp is no exception. As you mention, kelp is excellent source of iodine, minerals and trace elements such as potassium, magnesium, calcium and iron.
