Chocolate Rose Romance Shortbread

Nothing screams romance like chocolate and roses, and funnily enough it just so happens to be two of the key ingredients in these heart-shaped cookies! With the sweet, subtle taste of crushed up rose petals, this gluten-free shortbread is sure to impress even the coldest of hearts. Surprisingly even you will feel the love with how easy they are to make – so spread the amore by handing these out to your loved ones, they’ll appreciate all your thoughtful, hard easy work that went into them!


Makes 20 cookies Gluten Free Dairy Free Egg Free Sugar Free Vegetarian

Ingredients:
3 cups almond flour2 tablespoon crushed edible rose petals 5 tablespoon agave
1 cup slivered almonds¼ teaspoon salt1 tablespoon pure vanilla extract
½ teaspoon baking soda½ cup soy free earth balance spread1 cup chocolate chips

DIRECTIONS
Preheat oven to 350F



  • Lining a baking sheet with parchment paper spread your almonds onto it. Place in the oven, and bake for just under 10 minutes. You will want to keep your eye on these to ensure they don’t burn – flipping them every few minutes, until they have a nice golden glow. Once done, set aside.

  • In a large bowl, combine your flour, baking soda, rose petals and salt. Stirring well. After your almonds are finished, you can mix them in as well.

  • In a small bowl, combine your wet ingredients: earth balance, agave and vanilla. Mix well. Slowly adding in dry ingredients and mixing thoroughly.

  • Now that you’ve got your dough, you need to roll it out. Lay down some parchment paper or a rolling mat, and roll the dough to ¼ inch thick sections. Sandwich the dough between parchment papers and lay flat in your freezer for one hour. Tip: If you turned your oven off, reheat it again to 350F when your hour is up!

  • Using a cookie cutter cut your cookies and set them on a baking sheet. Leaving a little room between each cookie.

  • Bake for 8-10 minutes. Allow them to cool on the counter.

  • Meanwhile as your cookies are cooling, you will need to melt your chocolate for dipping! Do this by either using a double boiler on the stovetop (or a metal bowl over a regular pot), or in the microwave.

  • Once chocolate is melted, and cookies are cool, carefully dip your cookies into the chocolate. Make sure you have a lined sheet ready to place them on.

  • For best results, once cookies are done place them in the fridge or freezer so the chocolate hardens up before packaging or delivering with a love note to your special someone!


Make It This Way
Never knew editable rose petals existed until five minutes ago – don’t panic! They are easy to use and they add a fragrant and exotic flavor, perfect for special occasions. You can purchase rose petals in health food stores or gourmet food shops, just be sure to look for “edible rose petals” to avoid pesticides. When you are ready to use them, simply grind them in a coffee grinder to crush them. It's that easy!
