Creamy Raspberry Mint Popsicles
It’s a hot summer day, you’re sitting out on your patio soaking in the rays, and all you need is something cool and refreshing to complete your perfect afternoon. That’s where these delicious, four-ingredient popsicles come into play! They’re healthy, sugar-free and so simple to make you could do it with a beach bag over your shoulder and a towel around your waist! The goat yogurt is hypoallergenic and supports bowel health, while raspberries and lime are packed with antioxidants – making it the healthful, cool treat your body is craving!
Makes 8
- Gluten Free - Egg Free - Sugar Free - Vegetarian
Ingredients:
- 2 cups goat milk yogurt
- juice from 1 fresh lime, yield 2 tablespoon
- 10 mint leaves, sliced
- 2 cups frozen raspberries
Directions:
- Squeeze your lime juice into a large bowl.
- Gently stir in your yogurt, sliced mint leaves and raspberries. Stir to combine. Tip: Once you add the raspberries you want to act quickly before they start to melt and turn your popsicles pink!
- Spoon your mixture into your Popsicle mold and place in the freezer for a minimum of six hours. They will keep in your freezer for a couple weeks!
Make It This Way
Goat's dairy is more easily digested than cow's dairy and is a hypoallergenic choice. However, if you prefer, you can substitute the goat's milk yogurt in this recipe for a dairy-free yogurt of your choice.
Try This
If you don’t have a Popsicle mold, you can get creative and use a muffin tin and wooden sticks – they won’t look as pretty but they will still taste amazing!
