Gluten-free Flatbread

Who said you can’t enjoy a tasty side dish that mimics your all-time favourites. By using this gluten-free flatbread as a base for an artisan-inspired pizza you can feel guilt-free knowing it’s packed with protein. It’s easy to make, tastes divine and only requires a few simple ingredients. The best part, you can get creative with how you want to serve it – it makes the best burger bun, shareable appetizer or sandwiches.

Ingredients:
| 1 cup water | ¼ cup chickpea flour | 2 tablespoon ground flax seed |
| 2 tablespoon extra-virgin olive oil | ¾ cup white rice flour | ¼ teaspoon himalayan rock salt |
Directions
Set your oven to 375F
- In a large bowl, combine your water and oil together. Mix well.
- Slowly add your dry ingredients, one at a time, making sure to mix thoroughly so you have no lumps or dry flour patches hidden in the bowl.
- Grab two pans (square or round; we used two 8-inch cake pans) and line them with parchment paper or coat with coconut oil.
- Carefully divide mixture into both pans, and bake in the oven for 25-30 minutes. Making sure to keep an eye on them so they don’t burn.
- Once removed from oven, carefully remove from the pans and allow them to cool before using them in whichever way you choose!
Make It This Way
It’s hard to keep up with all the various type of gluten-free flours, let alone have all of them at your fingertips. If you don’t have chickpea flour, you could substitute it for quinoa, sourgum or brown rice flour.
Why not take your flatbread to the next level by adding in some dried herbs. We like the idea of basil, rosemary or Italian herbs – it will add a nice taste, and can transform your dish.
