Maple Cinnamon Apples

Nothing tastes like home quite like the simple combination of warm apples, cinnamon and maple. While its easy to make, low on the glycemic level as far as sweeter dishes go, we love the idea of turning this same recipe from a breakfast topper to a main course side dish. Add this topping to your pancakes, French toast or favourite oatmeal, or serve as a gourmet applesauce substitute for your roast pork tenderloin dinner. Either way, you won’t be able to get enough of anything you put this on!

Ingredients:
| 1 gala apple, sliced | 1 teaspoon maple syrup | 1 teaspoon lemon juice |
| ¼ cup water | 1 tablespoon quick cooking tapioca | ¼ teaspoon ground cinnamon |
Directions
- Cut up your apples and place slices in a small saucepan. Cover with water, and bring to a boil.
- Once boiled, reduce your heat to low and bring to a simmer. Apples should cook for another five minutes or so.
- As you wait, combine your maple syrup, tapioca, lemon and cinnamon in a small bowl. Set aside.
- Stir in your mixture to the simmering apples, ensuring everything is evenly coated. Add on a lid, and continue to simmer for another 5-10 minutes.
- Serve hot, or cold – however you wish!
Make It This Way
Depending on how you plan to use this dish, choose your apple(s) accordingly. For more of a sour-tasting apple to pair with pork, we recommend using green apples. For desserts or a breakfast topping, a sweeter, red apple may do the trick!
