Multiuse Sweet Potato Curry Sauce

Who doesn’t love walking into an Indian restaurant and breathing in the delicious scents of curry? Not us. We love it so much we decided to take it one step further – by bringing the smell to your home. This sweet potato curry sauce is delicious no matter how you use it: over rice, as a puree, tossed with tofu, salad dressing or as a meat marinade. It won’t compromise your healthy eating patterns, it won’t disappoint in taste and trust us, the colour spruces up any meal.

Serves 4-6

Ingredients:

1 cup raw sweet potato, cubed1 cup coconut milk, unsweetened2 tablespoons fresh cilantro, finely chopped
½ cup red onion, sliced2 tablespoons lemon juice1 teaspoon fresh mint, finely chopped
2 cloves garlic1 tablespoon curry powder
1 tablespoon grapeseed oil1/8 teaspoon sea salt

Directions

Preheat oven to 400F

  1. With your knife and cutting board, cut up your onion and sweet potato – toss in some oil and add in your minced garlic. Spread mixture over a baking sheet and roast in the oven until the potatoes are tender – 20 minutes or so.
  2. Meanwhile, in a blender add in your coconut milk, water, lemon juice and all of the spices. Blend until well incorporated.
  3. Once your vegetables are roasted, toss them in the blender and blend until smooth.
  4. Last but not least, stir in your fresh cilantro and mint – now, the tricky part, how are you going to use the sauce?

Make It This Way

To avoid unnecessary ingredients or hidden sugars, try making your own curry powder. Curry Powder

2 tablespoons whole cumin seeds, toasted 2 tablespoons whole cardamom seeds, toasted 2 tablespoons whole coriander seeds, toasted ¼ ground turmeric 1 tablespoon dry mustard 1 teaspoon cayenne Toast ingredients that need it, and grind altogether. Store in a sealed container.

Try This

If you’d like to use this sauce as a marinate place all ingredients in a Ziploc bag and for best results, refrigerate overnight. Freeze marinade and take it out as you need it for salads, vegetables or anything else you can come up with!

    Sweet potatoes are definitely a great staple to have in any kitchen, they are so versatile and add so much great nutrients to any meal and they are also so filling! I love any receipie that includes sweet potatoes and this curry is no different. The sweet potato curry sauce looks so delicious and so easy to make!       Sweet potatoes are packed with nutrients and add additional fibre to meals as well. They're filling and go deliciously with curry.

    Sweet Potato Curry Sauce

    This sweet potato curry sauce is so versatile and can be added to pretty much any dish to give it some extra vitamins and fiber to it. The sweet potatoes are so delicious and even adding a mix of sweet potatoes with other variations of potatoes would be really good. This looks so delicious and a great addition to any winter or colder months meals, especially since it contains garlic I love having that during colder months too.

      Hello,
      This is a great meal for the upcoming colder months and can be made as part of a meal prep or be frozen too. You can add in any vegetables you like to switch it up every now and then too.
