Apple Buckwheat Porridge

You’re a simple person, but the thought of eating oatmeal for the 76th day in a row has you wanting a change. Thankfully that’s why we have different grains like buckwheat! It overs a gluten-free way for you to get a change while still keeping the simplistic cooking instructions of its more sought after brother! This apple buckwheat porridge is full of flavor and natural sweetness from molasses, dates and maple syrup. Top it with hemp seeds, nuts, coconut and date syrup and you'll have a new morning porridge go-to!

Ingredients:
1.5 cups water | 1 apple | 1 tablespoon coconut oil |
1.5 cups apple juice | 3 egg whites | 1 teaspoon maple syrup |
1 cup buckwheat cereal | 1 cup dates, soaked for 1 hour | generous hemp seeds, almonds, walnuts, coconut |
2 tablespoon blackstrap molasses | 1 teaspoon cinnamon | |
1 teaspoon cinnamon | 2 tablespoon almond butter |
Directions
- In a large saucepan over medium heat, bring your water and apple juice to a boil.
- Once boiled, reduce your heat and add in your buckwheat cereal, molasses, cinnamon and apple. Bring mixture to a simmer.
- After the five-minute mark add in your whisked egg whites and stir together. Using your lid, cover and cook for an addition five minutes.
- As you’re waiting for this to cook, combine your almond butter, dates, cinnamon, coconut oil and maple syrup in a blender. Blend until smooth.
- Portion out your cooked grains into bowls, drizzle with your sauce and top off with extra toppings, such as hemp seeds, walnuts, coconut etc.

You can really have fun changing up the toppings in this recipe. Try carob chips, cacao nibs, raisins, figs, extra seeds, goji berries, aronia berries – just use your imagination and be sure to add in superfoods to give it a nutritional kick.

Apples in porridge with maple syrup is an amazing combination! I love any fruit with maple syrup in porridge or oatmeal but the apples really gives it that extra crunch, fiber, and flavour! This apple buckwheat porridge would be great for colder mornings too as I find porridge is a comforting thing to eat on a cold morning, so this is a recipe that would be great for the winter but of course can be enjoyed during any season especially since apples are popular all year round!
