The coffee roasting process is pretty straightforward and requires only that heat and constant movement be applied to the beans in a coffee roaster (whether industrial or a home roaster). During the high-temperature roasting process, green coffee beans undergo several chemical changes, including the loss of water and the caramelization of carbohydrates. These changes ultimately produce the darkened colour of roasted coffee beans and the characteristic aroma and flavours we associate with "coffee."

Though the steps involved in coffee roasting are simple, it takes a deft hand and lots of practice to become an expert roaster and to learn the precise amount of time each type of bean requires to develop its full potential.

What is Dark Roast Coffee?

Generally speaking, coffee roasts fall into one of four colour categories: light, medium, medium-dark, and dark.

Making a dark roast entails roasting the beans longer and at a higher temperature than lighter-roasted beans. Producing dark roast coffee requires temperatures ranging from 430 to 450 degrees Fahrenheit, as opposed to 380 to 400 degrees Fahrenheit for lighter roasts.

Dark roasting produces shiny black beans with an oily surface. They tend to be strong in flavour, with woody, spicy, nutty, and dark chocolate notes. Dark roasts are also less acidic than other roasts but will have a substantial bitterness when brewed.

Exploring the Varieties of Dark Roast Coffee

When it comes to coffee flavour, roasting is probably the most important factor. Dark roasted coffees come in various colours, from slightly dark brown, dark and charred. Dark roast coffee varieties include Full City Roast, Espresso, French Roast, Italian Roast, Viennese, High Roast, European Roast, New Orleans Roast, and Continental.

Individual coffee houses and brands may also have their names to designate a range of coffee types, varieties, and roasts. Always check labels carefully so you know what you're purchasing.

What does dark-roasted coffee taste like?

Dark roasted coffee has a low acidity, and a heavy body, and tends to have deeper and darker flavours along with a very distinct bitterness. The taste is often bold and rich and full of texture. 

Is dark roast coffee good or bad for you?

Coffee naturally contains antioxidants and anti-inflammatory compounds. However, how do you know which roast is the healthiest?

Well, studies suggest that the longer a coffee bean is roasted, the fewer antioxidant polyphenols it will contain. But the story doesn't end there because research has also shown that the antioxidant activity of coffee significantly rises with the degree of roasting. So, darker roasts have higher antioxidant activity than lighter roasts, regardless of their lower polyphenol content.

Does a dark roast have more caffeine than a lighter roast?

Somewhat counterintuitively, while many people assume that darker roasts naturally contain more caffeine, it's quite the contrary—light roasts have a slightly higher concentration of caffeine.
