Organosulfur Compounds – Garlic contains a group of sulfur-containing compounds, known as organosulfur compounds, which are responsible for its pungent odour and many of its health benefits. The most notable organosulfur compound in garlic is allicin, which is formed when garlic is crushed or chopped. Allicin is known for its antimicrobial properties and is considered one of garlic's main bioactive compounds.

Flavonoids – Garlic also contains various flavonoids, which are a type of plant pigment with antioxidant properties.
