Sweet and Savory Indian Slaw
Add a little international spice into your salad with this delicious combination of sweet and savory slaw! You’ll love the crunch paired with the wholesome goodness of fresh vegetables, especially when you pair this with your next BBQ dinner. Are you the one hosting the BBQ? Don’t fret – this salad is great to prepare ahead of time, and the longer it sits, the better it tastes!
Serves 4-6
- Gluten Free - Dairy Free - Corn Free -Vegetarian
Ingredients:
Slaw
- 6 cups julienne cut/matchstick carrots
- ½ cup sultana raisins
- 1 english cucumber julienne cut/matchstick
- ½ cup sunflower seeds
Indian Spice Mix
- ½ teaspoon ground cumin
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground cloves
- ½ teaspoon ground ginger
- ¼ teaspoon ground coriander
- pinch cayenne
- ⅛ teaspoon black pepper
- ¼ teaspoon ground allspice
Dressing
- ⅓ cup sunflower butter
- 1 tablespoon maple syrup+ spice mix above
- ¼ cup lemon juice
- ¼ teaspoon sea salt
Directions:
- In a serving dish, combine your salad ingredients together and mix. Set aside.
- In a small bowl, whisk together your spices – set aside.
- In a blender, combine all of your salad dressing ingredients, including your spices. Once blended smooth and you’re ready to eat, pour the dressing over your salad and mix to combine. Serve room temperature or chilled.
Make It This Way
Raisins make a great, sweet addition to the salad, however you would get the same sweetness from dried cranberries or blueberries if you prefer. Sliced up broccoli or Brussels sprouts would also make a great addition to the salad if you were looking to beef it up to feed more people!
